Traditional Beans Soup



Bean soup is a dish with a rich history, dating back centuries and enjoyed in various cultures around the world. Beans, a staple food in many regions, were valued for their nutritional content and ability to sustain people through harsh conditions. In ancient times, beans were often combined with herbs, vegetables, and sometimes meat to create a hearty and nourishing meal. Today, bean soup remains a popular dish due to its versatility and health benefits. Whether served as a comforting winter meal or a light summer soup, bean soup continues to be a beloved dish cherished for its simplicity, flavor, and cultural significance.


Ingredients:

500 g medium beans - Medium Beans

2 carrots chopped 

1 chopped onion

400 g canned tomatoes sauce - Organic Tomato Sauce

1/2 cup extra virgin olive oil - Extra Virgin Olive Oil

hot pepper (optional) - Yamas Cayenne Pepper

Dry meat (optional)

For serving:

olives

feta cheese - Authentic Greek Feta

preserved vegetables (giardiniera/cherry peppers etc.) - Yamas Giardiniera; Yamas Cherry Peppers


Instructions:

To prepare our bean soup, we begin by soaking the beans overnight. The following day, we thoroughly wash them before boiling them over low heat for approximately an hour, or until they become soft. After draining the beans, we rinse out the pot.

Next, we heat some oil and sauté onions and carrots for about 3 minutes. To this mixture, we add tomatoes, salt and pepper. Once the sauce begins to boil, we put the beans and dry meat (optional) and then continue boiling the mixture until the beans reach a mushy consistency.


Serving:

This delicious bean soup is sure to warm you up. Serve it with warm bread, olives, giardiniera/cherry peppers etc. and feta cheese or accompany with Carolina rice.
