Honey Cake




Desserts made with honey have a rich history that spans cultures and centuries. Honey has been used as a sweetener and flavor enhancer in desserts since ancient times. In many cultures, honey was considered a luxurious and precious ingredient, often reserved for special occasions and offerings to the gods. In the Middle East and North Africa, honey is a key ingredient in many traditional desserts, such as baklava, a sweet pastry made with layers of phyllo dough, nuts, and honey syrup. Similarly, in India, honey is used in sweets like gulab jamun and jalebi.


Ingredients:

2 cups all-purpose flour

1 cup walnuts

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt - Yamas Sea Salt

1 teaspoon ground cinnamon or 1 cinnamon stick for the glaze - Yamas Cinnamon

1/2 teaspoon ground ginger - Yamas Ginger

1/2 cup vegetable oil - Extra Virgin Olive Oil

1 cup honey - Greek Honey

1 cup sugar

2 eggs

1 teaspoon vanilla extract

1 cup hot water

For the glaze:

1/4 cup honey - Greek Honey

1/4 cup powdered sugar

1 tablespoon lemon juice - Lemon Juice


Instructions:

Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger.

In a separate bowl, mix together the vegetable oil, honey, sugar, eggs, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the hot water, and mix until well combined.

Pour the batter into the prepared baking pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the glaze by mixing together the honey, powdered sugar, and lemon juice until smooth.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, poke holes all over the top of the cake with a toothpick and pour the glaze over the warm cake, spreading it evenly.

Allow the cake to cool completely before serving. Slice and enjoy this delicious Honey Cake!
